Using your hands
Zeldman and Tantek explain why they code their sites by hand. I do it for much the same reasons. I feel more in control.
In my daytime job building web sites I routinely work with clients who need a CMS since they have no XHTML or CSS expertise. I try to give them what they need (and sometimes what they want ;-) ), but I do all the coding by hand, whether it’s XHTML, CSS, ASP or whatever. The WYSIWYG tools available are still too much WYSIWYG, focused more on the surface than the structure beneath. Not what I want.
